Recipe: Chocolate Orange Walnut Pie

SERVES:
makes one 9-inch pie

INGREDIENTS:

One 9-inch deep dish unbaked pie dough shell

2 Tbs unsalted butter
3/4 cup semi-sweet chocolate chips

1 cup light corn syrup
packed 1/2 cup light brown sugar
3 large eggs
1 tsp vanilla
1 generous Tbs orange zest
1 1/2 cups walnut halves


PROCEDURE:

You'll need to preheat the oven to 350 degrees and use a double boiler to melt 2 Tbs unsalted butter with 3/4 cup semi sweet chocolate chips.

Make sure the bottom of the bowl isn't hitting the simmering water as the chocolate is melting. Then, take the bowl off the heat and add 1 cup light corn syrup, 1/2 packed cup light brown sugar, 3 large eggs, 1 tsp vanilla and 1 generous Tbs grated orange zest and whisk it up.

At that point fold in 1 1/2 cups walnut halves. Add that mixture to the prepared pie shell and place it onto the center rack of the preheated oven.

That will take just about 50 minutes to one hour and it will puff up quite a bit as it is baking.
It will look like it is cracking a bit and it'll be a little jiggly when it's done, but it will set up as it cools.

Let that cool down completely before slicing and serving

HINTS:

Use pecans instead of walnuts.
